Quick and delicious tiger prawns with zesty shallot vinaigrette - ready in 30 minutes.
Ingredients:
  • 50.00 ml white wine vinegar
  • 109.20 gm olive oil
  • 1/2 medium shallot, finely chopped (2 tbsp)
  • 20.00 ml chopped fresh chives
  • 23.40 gm Dijon mustard
  • 1 lime, zested and juiced
  • 1 large egg yolk
  • 1 small clove garlic
  • 227.50 gm olive oil
  • 1 long red chilli, finely chopped
  • 60.00 ml finely chopped fresh coriander
  • 1kg large cooked tiger prawns, peeled, deveined, tails intact
  • Crushed ice, for serving
Instructions:
  • Prepare the shallot vinaigrette by whisking the vinegar while slowly adding the oil. Mix in the shallots and chives, then season with salt and pepper to taste before setting aside.
  • Make the tartar sauce in a small food processor by blending mustard, 1 tablespoon of lime juice, egg yolk, and garlic. While blending, slowly drizzle in the oil until fully emulsified. Transfer the aioli to a bowl and gently fold in the chili, coriander, and lime zest. Season with salt and pepper to taste.
  • Serve: Divide the sauces into 2 small dipping bowls. Spread the crushed ice on a platter and sprinkle with salt. Arrange the prawns on the ice and serve with the dipping sauces.
