Tikka-spiced fried eggs

Create gourmet tikka spiced fried eggs on toast with a zesty kick from spring onions, chili, and fresh coriander.
Ingredients:
  • 1 red chilli
  • 2 spring onions
  • 1 teaspoon tikka spice paste
  • a few sprigs of fresh coriander
  • 1 free-range egg
  • 1 flatbread to serve
Instructions:
  • Halve and deseed the chilli and trim the spring onions. Slice them thinly lengthwise, soak in iced water to curl. Cook the egg in a pan with curry paste for 1 minute. Add chopped coriander stalks for 30 seconds. Cook and baste the egg in spiced oil. Warm flatbread in a pan. Place on a plate, top with egg, drained chilli and spring onions. Sprinkle with coriander leaves and serve.
