Indulgent Tim Tam pancakes, a delicious twist on a classic Aussie treat, ideal for any meal.
Ingredients:
  • 160g packet salted caramel Tim Tams
  • 300.00 gm self-raising flour
  • 0.63 gm bicarbonate of soda
  • 53.75 gm caster sugar
  • 386.25 gm milk
  • 4.40 gm vanilla extract
  • 40g butter, melted
  • Coles caramel dream ice-cream & chocolate sauce, to serve
Instructions:
  • Set aside 4 Tim Tams. Crush the rest in a food processor until coarse crumbs form.
  • In a bowl, whisk together flour, bicarbonate of soda, and sugar. In a separate medium jug, whisk together milk, egg, and vanilla. Pour the milk mixture into the flour mixture and whisk until just combined.
  • Preheat a large non-stick frying pan over medium heat and brush with melted butter. Pour 1/4 cup of batter into the pan to make a pancake. Sprinkle with some Tim Tam crumbs. Cook for 2 to 3 minutes until bubbles form, then flip and cook for 2 more minutes. Transfer to a plate and cover loosely to keep warm. Repeat with remaining batter, sprinkling most of the Tim Tam crumbs and buttering the pan between batches.
  • Break the preserved Tim Tams into pieces. Plate the pancakes on serving dishes. Add a scoop of ice cream, drizzle with chocolate sauce, and sprinkle with Tim Tam pieces and crumbs. Serve and enjoy!
