Tim Tam pavlova

Decadent pavlova with chewy Tim Tams, a showstopper for guests.
Ingredients:
  • 200g Original Tim Tam
  • 8 egg whites, at room temperature
  • Pinch of cream of tartar
  • 430g (2 cups) caster sugar
  • 10.00 gm cornflour
  • 1 tsp white vinegar
  • 8.80 gm vanilla extract
  • 150g dark cooking chocolate, finely chopped
  • 30g unsalted butter, chopped
  • 300ml thickened cream, plus 185ml (3/4 cup), extra
  • 300ml double cream
  • 250g fresh raspberries
Instructions:
  • Preheat the oven to 150C/130C fan forced. Trace two 20cm circles on separate pieces of baking paper using a cake pan base. Place the marked side face down on a baking tray.
  • With a long sharp knife, diagonally slice 3 Tim Tams in half and set aside. Roughly chop the rest of the Tim Tams into 1cm pieces and place them, along with any crumbs, in a bowl. Set aside.
  • Whisk egg whites and cream of tartar in a bowl until stiff peaks form. Gradually add sugar, beating continuously until sugar dissolves and the mixture becomes thick and glossy. Mix in cornflour, vinegar, and 1 tsp vanilla extract. Gently fold in chopped Tim Tam until evenly distributed.
  • 1. Spread the meringue evenly among the marked circles, then shape and create furrows along the sides. Bake at 150°C/130°C fan forced for 10 minutes. Lower the oven temperature to 110°C/90°C fan forced and continue baking for 1 hour and 15 minutes, or until the meringue is crisp. Turn off the oven and allow the meringue to cool completely with the oven door closed.
  • Combine chocolate and butter in a heatproof bowl. Warm extra cream in a saucepan until nearly boiling, then pour over the chocolate mixture. Let it sit for 5 minutes, then stir until smooth. In a separate bowl, whip the creams and remaining vanilla until stiff peaks form.
  • Spread the ganache generously over the pavlovas, allowing it to drip over the sides. Let it sit for 10 minutes to firm up. Garnish one pavlova with half of the cream and half of the raspberries. Place the other pavlova on top, and finish by topping it off with the rest of the cream, raspberries, and reserved Tim Tams.
