Tim Tam surprise cake recipe

Create a delightful Tim Tam surprise cake with various flavors like salted caramel or red velvet for a delicious twist.
Ingredients:
  • 2 eggs
  • 255g (1 1/4 cups, firmly packed) light brown sugar
  • 1 tsp vanilla paste
  • 125ml (1/2 cup) vegetable oil
  • 250ml (1 cup) buttermilk
  • 225g (1 1/2 cups) self-raising flour
  • 50g (1/2 cup) cocoa powder
  • 2 x 200g pkt Tim Tam Original
  • 180g milk chocolate, finely chopped
  • 125ml (1/2 cup) thickened cream
  • 20g butter
Instructions:
  • Preheat your oven to 180C (160C fan forced). Grease a 20cm square cake tin and line the base and sides with baking paper.
  • Create the ganache by placing the chocolate in a bowl. Heat the cream and butter in a saucepan until simmering, then pour over the chocolate. Let it sit for 5 minutes to cool slightly. Use electric beaters to combine well. Cover and chill in the fridge for 2 hours.
  • Beat eggs, sugar, vanilla, and oil with electric beaters until pale and creamy. Mix in buttermilk. Fold in sifted flour and cocoa powder until combined.
  • Spread half of the mixture in the prepared tin and place a layer of Tim Tams on top (you may need to cut a few in half lengthwise to fit). Pour the rest of the mixture over the Tim Tams. Bake for 35-40 minutes or until a skewer inserted comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Whip the ganache using electric beaters for 60 seconds or until it turns pale and creamy. Be careful not to overmix. Spread the mixture over the cooled cake.
