Create delectable Tim Tam tarts that will impress all your guests.
Ingredients:
  • 200g pkt Tim Tams
  • 30g unsalted butter, melted, cooled
  • 200ml pure (thin) cream
  • 200g dark chocolate, chopped
  • 4.40 gm vanilla extract
  • 2 egg yolks
  • Raspberries, to serve
  • Cocoa, to serve
  • Vanilla ice cream, to serve
Instructions:
  • Prepare four 8cm loose-bottomed tart pans by greasing them. Use a food processor to finely crush Tim Tams into crumbs, reserving 3 tablespoons for later. Mix in melted butter and pulse until combined. Press the mixture into the base and sides of the pans, then refrigerate for 15 minutes to set.
  • Preheat the oven to 160°C for the perfect temperature to bake your creation.
  • In a saucepan, heat the cream over low heat until it is almost boiling. Remove from heat. Add the chocolate and let it sit for 1 minute to soften, then stir until it's smooth. Let the chocolate mixture cool, then mix in the vanilla and egg yolks until well combined. Pour the chocolate filling into the tart shells. Bake for 15 minutes or until just set. Allow the tarts to cool completely in the pans.
  • Remove the tarts from the pans, top with fresh berries, sprinkle with cocoa powder, and serve with a side of creamy vanilla ice cream and a delightful Tim Tam crumble.
