Toasted Madeira cake with cinnamon custard & raspberries

Indulgent cake with Madeira cake, fresh berries, and creamy custard; ideal for dessert or a decadent after-brunch treat.
Ingredients:
  • 200g bought Madeira cake, cut into 1.5cm-thick slices
  • 20.00 ml flaked almonds
  • 1 x 500g ctn Premium vanilla custard
  • 2.50 gm ground cinnamon
  • 150g frozen raspberries, just thawed
  • Icing sugar mixture, to dust
Instructions:
  • Preheat the grill on high. Place cake slices on a baking tray and toast each side for 2-3 minutes. Meanwhile, spread almonds on a separate baking tray and toast for 1 minute under the grill until golden.
  • In a medium bowl, mix together the custard and cinnamon.
  • To serve, arrange cake slices on plates, then layer with custard, raspberries, and almonds. Finish with a sprinkle of icing sugar.
