Start your day strong with vitamin-packed spinach for healthy bones and a boost of energy. Just like Popeye!
Ingredients:
  • 160 g ripe cherry tomatoes on the vine
  • 4 thin slices of wholemeal bread (35g each)
  • 3 large free-range eggs
  • 1 x 15 g slice of higher-welfare smoked ham
  • 80 g baby spinach
  • 2 tablespoons semi-skimmed milk
  • 1 heaped tablespoon cottage cheese
  • extra virgin olive oil
  • hot chilli sauce
Instructions:
  • Preheat the grill to high. Place tomato vines in a large baking tray, prick each tomato with the tip of a sharp knife, and grill for 4 minutes. Add bread to the tray to toast both sides. In a blender, combine 1 egg, ham, spinach, black pepper, and milk. Blend until smooth. Spread the eggy mixture onto the toast, then top with cottage cheese. Grill for another 4 minutes until edges brown. Meanwhile, fry 2 eggs in a non-stick pan with a lid on a medium heat. Serve Popeye bread with eggs and half of the grilled tomatoes. Drizzle with oil and chili sauce. Enjoy by crushing the tomatoes, tearing up the bread, breaking the egg yolk, and savoring.
