Toblerone Mountain Mud Cake

Indulgent Toblerone peak cake - a showstopping celebration with layers of different-sized Toblerone bars on top to devour.
Ingredients:
  • 250g Butter, chopped
  • 200g Toblerone, chopped
  • 430g (2 cups) caster sugar
  • 4 eggs
  • 125ml (1/2 cup) milk
  • 8.80 gm vanilla extract
  • 150g (1 cup) plain flour
  • 50g (1/2 cup) cocoa powder
  • Different-sized Toblerones, to decorate
  • Icing sugar, to dust
  • 150g Toblerone, chopped
  • 25g Butter, chopped
  • 60ml (1/4 cup) thickened cream
  • 400g milk chocolate, finely chopped
  • 60g Butter, chopped
  • 165ml (2/3 cup) thickened cream
Instructions:
  • Preheat your oven to 150C/130C fan forced. Grease two 20cm square cake pans and line them with baking paper. In a large saucepan, combine butter, Toblerone, caster sugar, and 160ml (2/3 cup) water. Stir over low heat until the sugar dissolves and the mixture is smooth and well combined (note: it won’t be completely smooth due to the nougat in the Toblerone). Transfer the mixture to a large bowl and let it cool slightly, stirring occasionally.
  • Combine eggs, milk, and vanilla, and whisk. Gradually sift in self-raising flour, plain flour, and cocoa. Gently fold to mix (be cautious not to overmix). Divide evenly into pans, smooth the surface with a spatula, and bake for 1 hour until a skewer comes out clean. Let cool in the pans for 20 minutes, then transfer to a wire rack to cool completely.
  • In a small saucepan over low heat, melt and combine all filling ingredients. Transfer the mixture to a bowl and chill in the fridge, stirring occasionally, for 45 minutes until spreadable.
  • Combine all topping ingredients in a small saucepan over low heat, stirring until melted and well mixed. Chill in the fridge, stirring occasionally, until spreadable, about 1 hour.
  • - Begin by laying one cake layer, bottom-side down, on a beautiful serving platter. Evenly spread the filling over the top. - Gently place the other cake layer, bottom-side up, on top of the filling layer. Proceed to cover the entire cake with the icing, ensuring the top and sides are well coated. - Slice the Toblerone bars neatly and artistically place them on top of the cake. - Finish off this masterpiece by dusting some icing sugar over the cake before serving.
