Indulgent Health Bar cheesecake with chocolate-covered toffee bits for a decadent treat, perfect for ending a meal.
Ingredients:
  • 2 cups graham cracker crumbs
  • 0.5 cup butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 4 large eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 7 (1.4 ounce) bars chocolate covered toffee bar, crushed
Instructions:
  • Heat the oven to 325°F (165°C).
  • Prepare the crust: Combine graham cracker crumbs and sugar in a small bowl. Blend in melted butter until fully incorporated. Firmly press the mixture into the base of a 9-inch springform pan, then wrap the pan's exterior with foil to waterproof it.
  • For the filling: In a large bowl, cream together cream cheese and sugar until smooth. Mix in lemon juice and vanilla, scraping the bottom of the bowl occasionally to avoid lumps. Add eggs one at a time, beating well after each addition. Gently fold in toffee bits before pouring the batter onto the crust.
  • Set the covered pan inside a larger cake pan with at least 1-inch tall sides. Then, place both pans in the preheated oven and fill the outer pan with water to make a water bath.
  • Bake for a total of 60 minutes, checking and refilling the water bath when needed. Turn off the oven and let the cheesecake sit inside with the door closed for 1 hour.
  • After baking, transfer the cheesecake from the oven to the refrigerator to chill for at least 4 hours before unmolding from the springform pan.
