Toffee melon balls with ginger yoghurt

Revamp a classic with rich toffee and flavorful spiced yogurt.
Ingredients:
  • 250.00 ml vanilla yoghurt
  • 20.00 ml finely chopped glace ginger
  • 700g rockmelon
  • 700g honeydew melon
  • 107.50 gm caster sugar
Instructions:
  • Mix together yoghurt and fresh ginger in a bowl.
  • Using a melon baller, scoop balls from rockmelon and honeydew melon. Place on a plate lined with paper towel, cover, and gently pat dry.
  • In a small heavy-based saucepan over low heat, gently mix caster sugar and 1/4 cup hot water until sugar is dissolved, about 4 minutes. Increase heat to high and let it boil undisturbed for 8 minutes until the mixture turns golden. Allow it to sit for 30 seconds to let the bubbles settle.
  • Place the melon balls in a large serving bowl and drizzle with toffee. Let it stand at room temperature for 5 minutes or until the toffee sets and cools. Serve immediately with the yogurt mixture.
