Toffeed pineapple with rum ice-cream

Ingredients:
  • 600g (3 cups) vanilla ice-cream, slightly softened
  • 2 1/2 tsp imitation rum essence (Queen brand)
  • 1 x 380g pkt (six slices) fresh pineapple slices
  • 140g (2/3 cup, firmly packed) brown sugar
Instructions:
  • In a metal bowl, gently mix together the ice cream and rum essence. Chill in the freezer.
  • Preheat the grill to high. Line a baking tray with a wire rack. Halve 2 slices of pineapple. Arrange them in a single layer on the rack. Sprinkle half of the sugar evenly over the pineapple slices. Grill for 2-3 minutes until sugar dissolves and pineapple browns. Flip the slices and sprinkle with the rest of the sugar. Grill for another 2-3 minutes until sugar dissolves and pineapple browns. Let it cool for 5 minutes before serving.
  • Top juicy pineapple slices with a generous scoop of rum-infused ice cream.
