Speedy veggie stir-fry beats takeout.
Ingredients:
  • 18.20 gm peanut oil
  • 1 tsp grated ginger
  • 350g firm tofu, cut into 5mm-thick slices
  • 200g snake beans (or green beans), cut into 4-5cm lengths
  • 2 bunches asparagus, woody ends trimmed, cut into 4-5cm lengths
  • 64.80 gm hoisin sauce
  • 60ml soy sauce
  • Steamed jasmine rice, to serve
  • 62.50 ml cashews, toasted
Instructions:
  • Heat a wok or deep frypan over medium heat. Add peanut oil and sauté garlic and ginger until aromatic.
  • Turn up the heat to medium-high and toss in the tofu, stirring until coated. Sear the tofu for 1 minute until golden on one side, then flip and incorporate beans and asparagus.
  • Reduce the heat to medium and cover the pan, allowing the beans and asparagus to cook until bright green, about 3 minutes. Then, add hoisin and soy sauce, and let it simmer for 2 minutes. Serve the flavorful stir-fry over rice, topped with crunchy cashews.
