Fluffy omelette with whipped cream for a luxurious touch.
Ingredients:
  • 2 eggs, separated
  • 63.13 gm Whipped Cream
  • 10g butter
  • 1 small tomato, diced
  • 25g (1/4 cup) grated cheddar
  • 1/2 small avocado, sliced
  • Fresh coriander, finely chopped
Instructions:
  • Beat egg whites with an electric beater until firm peaks form.
  • In a medium bowl, whisk together egg yolks and Dairy Whip Whipped Cream. Carefully fold in the egg white until fully incorporated.
  • Preheat the grill to high. Melt butter in a 17cm omelette pan or small non-stick frying pan over medium heat. Cook the egg mixture for 2-3 minutes until the underside is golden. Finish by placing the pan under the grill for 2 minutes until the omelette is golden and slightly soft in the center.
  • Layer the tomato, cheddar, avocado, and coriander on one side of the omelette, then fold the remaining half over to cover the filling. Season with salt and pepper before serving.
