Tomato and basil omelette, a harmonious classic.
Ingredients:
  • 2 sprigs of fresh basil
  • 3 cherry tomatoes
  • 2 large eggs
Instructions:
  • Prepare basil by tearing the leaves. Halve cherry tomatoes on a cutting board. Crack eggs into a bowl and season with salt and pepper. Beat until combined. Heat a non-stick pan on low. Increase the heat, add olive oil, and fry tomatoes for 1 minute. Reduce heat, sprinkle basil, pour in eggs, and swirl with a fork. Cook until slightly runny. Fold omelette in half when golden brown, then transfer to a plate.
