Whip up flavorful tomato bruschetta with olives, basil, and cheese in just 25 minutes for a delightful side dish.
Ingredients:
  • 1 loaf (1 pound) French or Italian bread
  • 2 tablespoons butter or margarine, softened
  • 4 medium roma (plum) tomatoes, thinly sliced
  • 1/4 cup sliced ripe olives
  • 1/2 teaspoon dried basil leaves
  • 3/4 cup crumbled feta cheese (3 ounces)
  • 2 cloves garlic, finely chopped
  • 1/4 cup olive or vegetable oil
Instructions:
  • Preheat oven to 375°F. Slice bread loaf in half horizontally and place cut sides up on a baking sheet. Brush with butter, then add tomatoes, olives, basil, and cheese on top.
  • Combine minced garlic with fragrant olive oil in a bowl. Generously drizzle the aromatic oil mixture over the gooey cheese. Bake in the oven for 12 to 15 minutes, or until the cheese develops a delicious golden-brown crust. Finally, slice the melty cheese into 2-inch pieces and serve.
