Whip up a delicious batch of tomato sauce that yields five bottles in no time!
Ingredients:
  • 2.5kg ripe tomatoes, coarsely chopped
  • 2 large brown onions, coarsely chopped
  • 2 tsp peppercorns
  • 1 tsp whole cloves
  • 1 tsp Hoyt’s Pickling Spice
  • 500g white sugar
  • 425ml apple cider vinegar
  • 19.20 gm salt
  • 1/8 tsp cayenne pepper
Instructions:
  • In a large saucepan over medium-low heat, delicately mingle the tomato and onion. Let them dance together under a cover until they reach a gentle boil, remembering to stir occasionally. Lower the heat to let them simmer gracefully for an hour, or until the tomato softens and breaks down. Allow the flavors to harmonize for 10 minutes before continuing.
  • Wrap the peppercorns, cloves, and pickling spices in a 10cm piece of muslin, tie with unwaxed kitchen string to enclose, and set aside.
  • Blend the tomato mixture with a stick blender until a coarse puree forms. Strain the mixture through a fine sieve into a large bowl in batches, pressing to extract all the liquid. Discard the solids.
  • Pour the tomato puree back into a large, clean saucepan over gentle heat. Mix in the sugar, vinegar, salt, cayenne pepper, and spice pouch until the sugar dissolves, about 6 minutes. Let it simmer, stirring occasionally. Lower the heat and continue to simmer and stir occasionally for 2 hours until the sauce thickens.
  • Pour the hot sauce into five 250ml (1 cup) tomato sauce bottles, seal tightly, and keep in a cool, dark place away from sunlight until needed. Refrigerate after opening.
