Tomato Vodka Sauce

Indulgent creamy sauce perfect for penne pasta.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (28 ounce) can canned peeled and diced tomatoes
  • 1 cup heavy whipping cream
  • 0.25 cup vodka
  • 0.25 teaspoon crushed red pepper flakes
  • 1 pound penne pasta
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • In a large skillet over medium heat, melt butter with oil. Add onion and sauté for 8 minutes until translucent.
  • Cook the tomatoes for 25 minutes in the skillet, stirring frequently, until almost all the liquid has evaporated.
  • Turn up the heat and introduce the cream, vodka, and red pepper flakes; allow it to boil for 2 minutes or until it reaches a sauce-like thickness. Season with salt and pepper to your liking.
  • First, boil a large pot of gently salted water until it reaches a rolling boil. Then, add the penne pasta and cook for 8 to 10 minutes, or until it is perfectly al dente. Drain the pasta and transfer it to a large bowl.
  • Simmer the sauce until hot and pour it over the pasta, tossing to coat. Finish by sprinkling with Parmesan cheese and serving.
