Spicy pork with bold flavors, perfect with Mexican fideo or white rice.
Ingredients:
  • 2 tablespoons canola oil
  • 2 pounds pork shoulder, cut into 1-inch chunks
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 large fresh jalapeno peppers, stems removed
  • 0.25 cup sliced onion
  • 1 clove garlic, crushed
  • 1 (6 ounce) can mushroom stems and pieces, drained
  • 1 (12 ounce) can diced tomatoes
  • 0.5 teaspoon ground cumin
Instructions:
  • In a large skillet over medium heat, heat oil. Season pork with salt and pepper, then add to skillet and stir to coat. Place jalapeno peppers in the pan, cover, and let simmer for 20 minutes. Uncover, remove jalapenos, chop roughly, and set aside. Cook pork uncovered until browned and liquid evaporates, approximately 10 minutes.
  • Sauté the onion and garlic until fragrant, about 2 minutes. Toss in the mushrooms and cook for an additional minute. Incorporate the tomatoes, chopped jalapenos, and pork, then sprinkle in the cumin. Cover and simmer on low heat for 10 minutes.
