Easy weekday breakfast: Crispy tortilla with scrambled eggs and cheese, like a delicious breakfast pizza.
Ingredients:
  • 1 large egg
  • 1 teaspoon milk
  • 1 1/2 teaspoons butter
  • 1 (7 inch) flour tortilla
  • 2 slices jalapeno jack cheese
Instructions:
  • Combine the egg and milk in a small bowl and whisk until well blended.
  • In a skillet over medium heat, melt the butter until sizzling. Add the egg mixture, tilting the skillet to coat evenly. Let it cook until the egg is firm, for about 2 minutes. Gently place the flour tortilla over the cooked egg, and then flip both together, ensuring the tortilla is now at the bottom.
  • Lay cheese slices on top of the egg-topped tortilla and cook until crispy, for 3 to 4 minutes. Then, cover the skillet to melt the cheese, approximately 1 to 2 minutes.
