Authentic Greek pita bread recipe, with a tip to achieve soft and fresh pitas: allow the dough to rest to enhance tenderness.
Ingredients:
  • 1 package active dry yeast
  • 1.25 cups warm water (100 to 110 degrees F/40 to 45 degrees C)
  • 3.5 cups all-purpose flour, or as needed - divided
  • 1.5 teaspoons salt
  • 0.25 cup vegetable shortening
Instructions:
  • In a mixing bowl, gently sprinkle yeast over warm water and let it sit until a creamy foam develops, roughly 5 minutes. Add 2 cups of flour, salt, and shortening; mix vigorously for 2 minutes with a fork. Gradually stir in the rest of the 1 1/2 cups of flour as necessary.
  • Transfer the dough onto a floured surface and knead until it's smooth and elastic. Add more flour if the dough is sticky. Shape it into a ball, cover with a kitchen towel, and allow it to rest in a warm spot for 15 minutes.
  • Heat your oven to a toasty 500°F (260°C).
  • Take the dough, divide it into 12 equal portions, and shape each into a ball by rolling them between floured hands. Cover the dough balls with a kitchen towel and allow them to rest for 10 minutes. Flatten the balls into rounds on a floured surface, cover with a kitchen towel, and let rest for another 10 minutes. Roll each dough ball gently into a 6-inch circle on a floured surface. Place the pita breads in a single layer on ungreased baking sheets.
  • Place the pita bread in a preheated oven until they puff up, approximately 3 to 4 minutes. Then, using a spatula, flip the bread over, return to the oven, and bake for an additional 2 minutes. Once baked, allow the pita bread to cool on wire racks before slicing them in half and delicately separating the tops and bottoms to create pockets for filling.
