Surprise a train lover with a track-themed cake.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix or 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Red, yellow, blue and green food colors
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
  • Assorted colors licorice twists
  • Gumdrops
  • 2 chocolate-covered caramel candies
  • 2 Oreo chocolate creme sandwich cookies, crumbled
  • Gummy or jellied candy rings
  • Assorted candies (gumdrops, jelly beans, candy corn, etc.)
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans). Lightly grease the bottoms of two 8x4- or 9x5-inch loaf pans. In a large bowl, use an electric mixer to beat together cake mix, water, oil, and eggs on low speed for 30 seconds, then on medium speed for 2 minutes, scraping the bowl occasionally. Pour the batter into the pans.
  • Bake the yellow cake for 28 to 36 minutes and the devil's food cake for 31 to 39 minutes until a toothpick inserted in the center comes out clean. Let them cool for 10 minutes, then gently run a knife around the sides of the pans to release the cakes. Transfer the cakes on cooling racks and let them cool completely, approximately 1 hour. For easier handling, chill or freeze the cakes for 30 to 60 minutes until firm.
  • Divide the vanilla frosting into 4 small bowls. Color one bowl with red food coloring, one with yellow, one with blue, and one with green. Place 1/2 cup of chocolate frosting into a resealable plastic bag and set it aside.
  • Using a serrated knife, level the surface of each cake by cutting off the rounded top. Place the cakes cut side down. Carefully cut the first cake to create the engine, ensuring not to cut all the way through when removing a piece. Refer to the diagram for guidance. Place piece 2 on top of piece 1 with a small amount of frosting in between. Divide the second cake into 4 equal pieces to make the cars as shown in the diagram. Seal in crumbs by spreading a thin layer of chocolate frosting over the top and sides of the engine. Apply a thin layer of red, yellow, blue, and green frosting on top and sides of each car to seal in crumbs. Refrigerate or freeze the cakes for 30 to 60 minutes until the frosting sets.
  • Prepare a resealable plastic bag filled with chocolate frosting and cut a small hole in the corner. Use the bag to pipe train tracks onto a serving tray. Frost the engine cake with the remaining chocolate frosting and frost the boxcars with the remaining colored frosting. Carefully transfer the cakes to the serving tray using a large spatula.
  • Arrange licorice twists in a diagonal pattern on the front of the engine for the cow-catcher and trim the engine. Decorate the engine with gumdrops for the face and chocolate candies for the smoke stack. Sprinkle crumbled cookies on the back of the engine and use gummy candy rings for wheels. Enhance each train car by adding licorice twist trim, gummy candy rings for wheels, and assorted candies on top. Store the finished train loosely covered.
