Creamy fruit dessert from England.
Ingredients:
  • 30g (1/2 cup) flaked coconut
  • 1 x 300ml ctn thickened cream
  • 520g (2 cups) Tropical Lite yoghurt
  • 1 x 300g pkt frozen Kensington Pride Mango Cheeks, just thawed
Instructions:
  • Toast the coconut in a frying pan over medium heat, stirring constantly, for about 5 minutes until golden brown. Remove from the pan and let it cool on a plate.
  • Whip cream with an electric beater until soft peaks form. Gently fold yogurt into the whipped cream until well combined using a large metal spoon.
  • In a blender, puree the mango until smooth. Divide half of the yoghurt mixture among six 250ml (1-cup) capacity serving glasses. Layer with half of the mango puree. Repeat with the remaining yoghurt mixture and mango. Swirl with a knife and top with coconut before serving.
