Vibrant tropical fruit pasta with bell peppers, tomatoes, peanuts, cilantro, and cardamom. Bursting with flavors, ready in just 35 minutes!
Ingredients:
  • 4 ounces uncooked vermicelli
  • 1 medium red bell pepper, cut into 2 1/4-inch strips
  • 1 small papaya or mango, chopped (1 cup)
  • 1 medium tomato, chopped (3/4 cup)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon peanut oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
  • 1/4 cup cocktail peanuts, chopped
Instructions:
  • Prepare the vermicelli according to package instructions. Once cooked, rinse under cold water and drain well.
  • Combine vermicelli and all remaining ingredients, excluding peanuts, then garnish with a sprinkle of peanuts.
