Elevate lunch with colorful, flavorful, and crunchy salad featuring shredded carrots, sliced tomatoes, and a blend of two cheeses.
Ingredients:
  • 1 (6-oz.) can water-packed tuna, drained
  • 1/4 cup low-fat small curd cottage cheese
  • 1/4 cup light mayonnaise
  • 1/4 cup shredded carrot
  • 4 slices whole wheat bread, toasted
  • 4 slices tomato
  • 4 oz. (1 cup) shredded mozzarella or Cheddar cheese
Instructions:
  • Mix tuna, cottage cheese, mayonnaise, and carrot in a medium bowl until well combined.
  • Evenly spread the flavorful tuna mixture on the crispy toasted bread. Arrange them on a baking sheet without greasing. Add a juicy tomato slice and delicious cheese on top of each slice.
  • Place in the oven and broil until the cheese is bubbly and golden brown, about 1 to 2 minutes, located 6 to 8 inches from the heat source.
