Creamy tuna salad with veggies, raisins, and peanuts wrapped in a tortilla - a delicious twist on classic tuna wraps.
Ingredients:
  • 2 (5 ounce) cans tuna, drained
  • 0.5 large carrot, shredded
  • 0.33333334326744 cup chopped golden raisins
  • 0.33333334326744 cup chopped peanuts
  • 0.25 cup chopped red onion
  • 0.25 cup chopped red bell pepper
  • 0.25 cup finely chopped fresh cilantro
  • 1 tablespoon chopped canned jalapeno peppers, or to taste, juice reserved
  • 0.33333334326744 cup mayonnaise
  • 0.33333334326744 cup cream cheese, softened
  • 0.5 lime, juiced
  • 0.25 teaspoon curry powder, or to taste
  • 2 large flour tortillas
Instructions:
  • Mix together the tuna, carrot, raisins, peanuts, red onion, red bell pepper, cilantro, and jalapeno peppers in a bowl.
  • In a separate bowl, combine mayonnaise, cream cheese, lime juice, curry powder, and jalapeno juice, to taste. Mix this creamy mixture into the tuna until well incorporated. Spread the flavorful tuna onto tortillas, roll them up, and chill in the fridge for an hour before slicing.
