Tuna mornay recipe for two

Introducing a perfect portion-sized tuna mornay for two, eliminating leftovers stress.
Ingredients:
  • 25g spreadable butter, chopped
  • ½ brown onion, finely chopped
  • 1 small celery stalk, trimmed, finely chopped
  • 30.00 ml plain flour
  • 257.50 gm milk
  • 82.50 ml grated cheddar cheese
  • 1/2 x 425g can tuna in springwater, drained, flaked
  • 1 small bread roll
  • Olive oil cooking spray
  • Baby cos lettuce, to serve
  • Cherry tomatoes, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced).
  • In a saucepan, melt butter over medium heat until foamy. Add onion and celery, cooking until onion softens, about 2-3 minutes. Sprinkle in flour and stir with a wooden spoon until mixture bubbles, about 1-2 minutes more.
  • Take the pan off the heat. Gradually pour in milk, 1/4 cup at a time, stirring constantly to avoid lumps. Place the pan back on medium heat. Stir and cook for 5 minutes until the sauce boils and thickens. Remove from heat and mix in cheese and tuna.
  • Split the mixture evenly between two 1-cup ovenproof dishes. Tear a bread roll into small pieces and scatter over the top. Lightly spray with oil. Arrange the dishes on a baking tray and bake for 15 minutes until golden. Serve alongside fresh lettuce and tomatoes.
