Tuna puff pie

Ingredients:
  • 1 zucchini, grated
  • 3 sheets ready-rolled puff pastry, defrosted
  • 1 can tuna in brine, drained and broken up
  • 1/2 red capsicum, chopped finely
  • 1 carrot, grated
  • 1 can creamed corn
  • 1 small onion, finely chopped
  • 250.00 ml fresh breadcrumbs
  • 3 eggs, beaten
  • 59.40 gm mayonnaise
  • 250.00 ml tasty cheese, grated
  • Salt and pepper
  • Milk, to glaze
Instructions:
  • Preheat your oven to 180C. Grease a large baking dish and elegantly line it with 1 1/2 sheets of puff pastry.
  • Mix all the ingredients except cheese, milk, and puff pastry in a large bowl. Season to taste. Spread the mixture over the pastry and flatten it. Sprinkle grated cheese on top, cover with the remaining puff pastry, seal the edges, and pierce holes in the top. Brush with milk for a nice glaze.
  • Bake for 1 hour until golden brown and the filling is set. Enjoy on its own or with a side salad.
