15-minute dinner: Tasty turkey and veggie sandwiches.
Ingredients:
  • 1/2 cup fat-free mayonnaise or salad dressing
  • 1 teaspoon Italian seasoning
  • 1/2 lb smoked turkey breast slices, cut into strips
  • 2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
  • 4 hoagie buns (6 inch), split
Instructions:
  • Combine creamy mayonnaise with aromatic Italian seasoning in a small bowl, ready for use.
  • Heat a 10-inch nonstick skillet over medium-high heat until hot. Add the turkey, bell pepper, and onion stir-fry, then cook and stir for 1 minute. Cover the skillet and continue cooking for an additional 2 minutes.
  • Spread 1 tablespoon of the flavorful mayonnaise mixture evenly on the cut sides of the buns.
  • Continue cooking and stirring in the skillet uncovered for an additional 1 to 3 minutes, or until the liquid has evaporated and the bell pepper is tender.
  • Spread the turkey mixture evenly on the bottom halves of the buns, then place the top halves on top. Wrap each sandwich in foil for a convenient on-the-go dinner option.
