Elevate your Thanksgiving meal for two with a flavorful boneless turkey breast casserole packed with all the traditional stuffing goodness.
Ingredients:
  • 16 slices white bread
  • 1 tablespoon extra-virgin olive oil
  • 1 large yellow onion, chopped
  • 4 stalks celery, chopped, or more to taste
  • 1.5 tablespoons poultry seasoning
  • 1 cup chicken broth, or as needed
  • 1 (2 pound) boneless turkey breast
  • 2 tablespoons salted butter, cubed
  • 2 tablespoons salted butter, melted
Instructions:
  • Preheat your oven to 325°F (165°C). Grease a 2 1/2-quart baking dish generously with butter and arrange the bread slices on baking sheets.
  • Toast bread in the preheated oven until beautifully golden, remembering to flip halfway through, for a total of about 15 minutes.
  • While the bread is toasting, melt a mixture of 2 tablespoons of butter and olive oil in a frying pan over medium-high heat. Saute the onion and celery until they are soft and lightly browned, for about 5 to 7 minutes.
  • Cube the toast and combine it in a large mixing bowl with the sauteed vegetables. Season with poultry seasoning, salt, and pepper. Pour in just enough chicken broth to bind the mixture together, creating a moist stuffing. Transfer the mixture to the prepared baking dish.
  • Begin by thoroughly washing the turkey in cold water and then gently drying it. Next, place the turkey breast side up on the bed of stuffing. Slide pieces of butter under the skin and drizzle melted butter over the top. Season with a light sprinkling of salt and pepper before covering with foil.
  • Roast the turkey in a preheated oven for 2 1/2 hours. Uncover and roast for an additional 30 minutes, until the turkey is fully cooked, with clear juices and golden skin. Rest the turkey on a plate for 10 minutes before slicing.
