Turkey burger with grilled pineapple relish

Chef's take: Summer delight - Curtis' turkey burger topped with sweet pineapple relish!
Ingredients:
  • 100g fresh pineapple, cored, cut into 1cm thick slices
  • 1/4 red onion, sliced into 1cm thick rings
  • 1 small field tomato, halved
  • 5.30 gm lime juice
  • 500g butcher turkey mince
  • 21.60 gm hoisin sauce
  • 20.00 ml fresh coriander, roughly chopped, plus extra sprigs to garnish
  • 4 round rolls
  • 1 Hass avocado, peeled and cut into thin slices
Instructions:
  • Preheat your BBQ until it reaches a sizzling medium to high heat.
  • Prepare the relish by gently coating pineapple, tomato, and red onion with a tablespoon of oil, then generously season with salt and pepper.
  • Grill until tender with a nice charred exterior, approximately 5 to 7 minutes. Allow to cool before serving.
  • After cooling, transfer the grilled items to a food processor and pulse until a chunky relish forms. Season with salt, pepper, and lime juice to your taste, and then set aside.
  • Combine the turkey, hoisin sauce, and coriander in a mixing bowl, gently mixing until fully blended.
  • Shape the turkey mixture into four even patties and place them on a baking sheet lined with parchment paper.
  • Gently press down on the patties to ensure they are slightly larger than the buns.
  • Brush the turkey patties delicately with olive oil and generously season with salt and pepper on both sides before grilling on the BBQ.
  • Grill the turkey burgers until they reach an internal temperature of 75°C when tested with an instant-read thermometer, approximately 3 minutes on each side.
  • Lightly brush the cut sides of the buns with olive oil and grill, oiled side down, until toasted with grill marks, for about 30 seconds to 1 minute while the burgers finish cooking.
  • Take the buns and burgers off the BBQ and let the burgers rest for 3 minutes.
  • Season avocado slices with a pinch of salt and freshly ground black pepper, then top the bun bottoms with them.
  • Lay the burgers on top of the avocado slices.
  • Drizzle each burger with the vibrant salsa, garnish with fresh coriander sprigs, complete with the bun tops, and enjoy!
