Turkey burgers with coleslaw

Whip up kid-friendly, delicious turkey burgers for a nutritious dinner option.
Ingredients:
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 500g Ingham turkey mince
  • 125.00 ml wholemeal fresh breadcrumbs
  • 45.20 gm barbecue sauce
  • 1.25 gm smoked paprika
  • 125.00 ml grated low-fat cheddar cheese
  • 8 wholegrain dinner rolls, split, toasted
  • Extra barbecue sauce, to serve
  • 250g cabbage
  • 1 medium carrot, peeled, grated
  • 1/2 small red capsicum, thinly sliced
  • 187.50 ml low-fat plain Greek-style yoghurt
Instructions:
  • Preheat oven to 180°C/160°C fan-forced. Heat oil in a large frying pan over medium heat. Sauté onion and garlic for 4 minutes until softened. Transfer to a bowl and let it cool for 10 minutes.
  • In a large bowl, mix together turkey mince, breadcrumbs, barbecue sauce, paprika, and onion. Season with salt and pepper. Shape mixture into eight 2cm-thick patties.
  • In a pan, heat up the remaining oil over medium heat. Sear the patties for about 3 minutes on each side until nicely browned. Transfer the patties to a baking tray and bake for 5 minutes until nearly cooked. Sprinkle cheese evenly over the patties and bake for an additional 3 to 5 minutes until the cheese melts and the patties are fully cooked. Let them rest for 5 minutes covered with foil before serving.
  • To prepare the Coleslaw, mix cabbage, carrot, and capsicum in a large bowl. Stir in yogurt and season with salt and pepper. Toss everything together until well combined.
  • Place the roll bases on plates. Layer with coleslaw, patties, and extra barbecue sauce. Finish with the roll tops. Serve and enjoy!
