Spicy homemade turkey chorizo with fresh spices and chiles for an authentic kick in any dish.
Ingredients:
  • 2 dried red chile peppers
  • 1 tablespoon dried Mexican oregano
  • 2 teaspoons smoked salt
  • 0.75 teaspoon white sugar
  • 0.5 teaspoon multicolored peppercorns
  • 2 cloves garlic
  • 2 tablespoons New Mexico red chile powder
  • 2 tablespoons smoked paprika
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon water
  • 1.5 pounds ground turkey breast
Instructions:
  • Grind dried peppers in a mortar until medium-sized. Add oregano, salt, cumin, sugar, and peppercorns, and grind into a rough powder. Incorporate garlic until a paste forms. Mix in chile powder and paprika using a wooden spoon. Stir in vinegar and water. Mix thoroughly.
  • In a large bowl, combine ground turkey with the seasoning paste, using your hands covered in clean rubber gloves. Refrigerate the mixture for at least 1 hour before incorporating into your preferred recipe.
