Spicy lean turkey sausage flavored with chiles, oregano, cumin, and garlic mimics the taste of authentic Mexican chorizo.
Ingredients:
  • 3 dried red chile peppers, or more to taste
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons red chile powder
  • 1 tablespoon water
  • 1 tablespoon crushed dried oregano
  • 2 teaspoons salt
  • 2 large cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 0.75 teaspoon white sugar
  • 0.5 teaspoon freshly ground black pepper
  • 1.25 pounds extra-lean ground turkey breast
  • 2 teaspoons olive oil
  • 0.5 lime, juiced
  • 0.25 orange, juiced
Instructions:
  • Grind dried red chile peppers in a spice grinder until coarse.
  • In a large bowl, blend ground chile peppers, apple cider vinegar, red chile powder, water, oregano, salt, garlic, cumin, sugar, and black pepper until evenly combined. Mix in the turkey until well-coated with seasonings.
  • In a large skillet over medium-high heat, sizzle the olive oil before sizzling up seasoned turkey, breaking it into delectable bites. Cook until no longer pink, about 3 to 5 minutes. Splash in zesty lime juice and sweet orange juice, then simmer until beautifully browned, around 5 more minutes.
