Turkey meatloaf: Tender and moist Thanksgiving dinner any time.
Ingredients:
  • 2 teaspoons vegetable oil
  • 3/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup shredded reduced-fat sharp Cheddar cheese (1 oz)
  • 1/4 cup Progresso™ Italian style bread crumbs
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon ketchup
  • 1/2 teaspoon pepper
  • 1 egg, slightly beaten
  • 1 1/4 lb ground turkey breast
  • 1/2 cup ketchup
  • 1 tablespoon packed light brown sugar
  • 1 teaspoon yellow mustard
Instructions:
  • Preheat the oven to 350°F and generously coat an 8x4-inch loaf pan with cooking spray.
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Sauté onion, bell pepper, and garlic for 3 minutes, stirring occasionally. Allow to cool.
  • Combine cheese, bread crumbs, Italian seasoning, 1 teaspoon ketchup, salt, pepper, egg, and onion in a large bowl. Add crumbled turkey, mix gently, and press into a loaf pan.
  • - Bake for 35 minutes. - In a small bowl, combine 1/2 cup ketchup with brown sugar and mustard. - Spread the mixture over the meatloaf. - Bake for an additional 5 minutes, or until a meat thermometer reads 160°F when inserted in the center. - Allow the meatloaf to rest for 10 minutes before slicing.
