Turkey rissoles

Healthy turkey rissoles, perfect for the whole family.
Ingredients:
  • 500g lean turkey mince
  • 1 small brown onion, finely diced
  • 2 garlic cloves, crushed
  • 20.00 ml fresh rosemary leaves, finely chopped
  • 50g (1 cup) fresh breadcrumbs
  • 1 egg, lightly whisked
  • Salt & ground black pepper, to taste
  • Light olive oil spray
  • 125g mixed salad leaves, washed, dried
  • 4 medium egg tomatoes, cut lengthways into eighths
  • 1 medium Lebanese cucumber, halved, sliced
  • 30.00 ml balsamic vinegar, to serve
Instructions:
  • Combine mince, onion, garlic, rosemary, breadcrumbs, egg, salt, and pepper in a mixing bowl. Mix thoroughly. Shape into 8 equal rissoles.
  • Lightly spray a large non-stick frying pan with olive oil and heat over medium-high heat. Cook 4 rissoles for 1-2 minutes on each side until browned. Reduce heat to medium-low and cook for another 2-3 minutes on each side until cooked. Cover with foil to keep warm. Repeat with remaining rissoles. Serve with salad leaves, tomatoes, and cucumber topped with balsamic vinegar.
