Transform turkey and stuffing into a delicious soup with onions, carrots, celery, and tomatoes for a cozy and satisfying meal.
Ingredients:
  • 0.25 cup butter
  • 3 ribs celery, sliced
  • 3 carrots, thinly sliced
  • 1 large onion, chopped
  • 3 cups chopped cooked turkey
  • 2 cups leftover stuffing
  • 2 large tomatoes, peeled and chopped
  • 3 sprigs fresh parsley, minced
  • 6 cups turkey stock
  • 1.5 cups egg noodles
Instructions:
  • In a stockpot over low heat, melt butter until fragrant. Add celery, carrots, and onion; sauté until tender, about 8 to 10 minutes.
  • Combine turkey, stuffing, tomatoes, and parsley in the pot. Add turkey stock and bring the soup to a boil. Reduce heat and simmer partially covered for about 1 hour to let the flavors meld together.
  • 1. Boil a big pot of lightly salted water. Add egg noodles and cook until al dente, about 7 to 9 minutes. Drain well.
  • Transfer piping hot noodles into deep serving bowls; generously pour flavorful soup over them.
