Turkey-Baked Potato Soup

Creamy potato soup with bacon, ready in just 30 minutes.
Ingredients:
  • 5 slices bacon
  • 1 medium sweet onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, finely chopped
  • 7 cups turkey or chicken broth
  • 2 baked potatoes, chopped
  • 3 cups shredded cooked turkey or chicken
  • 1 can (15 oz) great northern beans, drained, rinsed
  • 2 teaspoons ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground pepper
  • Chopped fresh cilantro or parsley, if desired
Instructions:
  • Cook bacon in a 10-inch skillet until crispy. Drain on paper towels, saving 2 tablespoons of drippings in the skillet. Crumble bacon and set aside.
  • Saute onion, carrots, and garlic in sizzling drippings for 6 minutes, stirring often until soft. Mix in all other ingredients except cilantro. Bring to a boil, then lower the heat. Cover and simmer for 10 minutes. Add crumbled bacon and top each serving with fresh cilantro.
