Sweet Potato Chips with Cranberry Aïoli

Baked sweet potato chips with sea salt and pepper, served with cranberry aioli dip made with canned cranberry sauce, mayo, Dijon mustard, and orange juice - the perfect complement to your post-Thanksgiving turkey sandwiches.
Ingredients:
  • 2 large dark-orange sweet potatoes, peeled, cut into thin slices
  • 1/4 cup olive oil
  • Coarse sea salt and pepper to taste
  • 1/2 cup cranberry sauce (from 8- or 14-oz can)
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon orange juice
Instructions:
  • Preheat the oven to 350°F and cover two 15x10x1-inch pans with foil.
  • Toss sweet potatoes with oil in a large bowl. Arrange them in a single layer on pans. Sprinkle with salt and pepper.
  • Bake for approximately 40 minutes, flipping halfway through, until crispy to your liking.
  • Combine aioli ingredients in a small bowl and chill until ready to serve. Enjoy with chips for dipping.
