Turkey-Brown Rice Pilaf

Transform leftover Grilled Jamaican Turkey into a delicious and simple pilaf for a stress-free meal!
Ingredients:
  • 1/2 pound cooked turkey breast tenderloin
  • 2 teaspoons vegetable oil
  • 2 cups cooked brown rice or bulgur
  • 1 medium carrot, finely chopped (1/2 cup)
  • 2 medium green onion, chopped (2 tablespoons)
  • 1 medium celery stalk, finely chopped (1/2 cup)
  • 2 tablespoons Progresso™ chicken broth (from 32-oz carton)
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, if desired
Instructions:
  • Begin by chopping the turkey. In a 10-inch nonstick skillet over medium-high heat, heat oil. Add rice, carrot, onions, and celery to the skillet and cook for 5 minutes, stirring frequently, until the vegetables are tender and the rice is a light toasted brown.
  • Combine the broth and turkey in the pot, then simmer on medium-low heat for about 5 minutes until heated through, stirring occasionally. Sprinkle with cheese and parsley before serving.
