Create a decadent fusion dessert merging two beloved post-meal treats.
Ingredients:
  • 100g Turkish delight, coarsely chopped
  • 625ml (2 1/2 cups) thin cream
  • 7 egg yolks
  • 100g (1/2 cup) caster sugar
  • 2 tsp rosewater
  • 32.00 gm brown sugar
Instructions:
  • Preheat the oven to 150C. Place six 185ml (3/4-cup) ramekins in a roasting pan and sprinkle the bases with Turkish delight.
  • In a saucepan over medium heat, gently heat the cream, stirring continuously until it just starts to simmer (be careful not to boil). This should take around 5 minutes.
  • Whisk the egg yolks, caster sugar, and rosewater together using a balloon whisk until well combined.
  • Gently fold whipped cream into the egg yolk mixture, then divide the mixture evenly into ramekins. Place the ramekins in a roasting pan and carefully pour boiling water into the pan until it reaches halfway up the sides of the ramekins.
  • Bake in a preheated oven until just set. Allow the ramekins to cool for 2 hours at room temperature, then place in the fridge for 6 hours to set, covered with plastic wrap.
  • Preheat the grill on high. Sprinkle the brulees with brown sugar and cook under the grill for 2-3 minutes until the sugar bubbles and caramelizes. Serve immediately.
