Ingredients:
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp cumin seeds
  • 400g lamb mince
  • 185ml (3/4 cup) water
  • 44.40 gm tomato paste
  • 20.00 ml currants
  • 3 pieces Lebanese bread
  • 100g Greek-style feta
  • 60g baby spinach leaves
Instructions:
  • In a medium saucepan, gently warm the oil. Saute the onion until golden, stirring occasionally for about 7 minutes. Stir in the garlic and cumin, cooking for an additional 2 minutes until fragrant.
  • Turn up the heat to medium-high. Cook the mince while stirring with a wooden spoon to break up any lumps until it changes color, which should take about 4 minutes. Add the water and tomato paste, then reduce the heat to medium and let it simmer until most of the liquid evaporates, approximately 20 minutes. Mix in the currants, season with salt and pepper, and allow it to cool slightly.
  • Preheat a sandwich press. Lay the bread on a clean surface. Spread mince mixture on half of each slice. Crumble feta over the mince, add spinach, then fold in half.
  • Place a sandwich in the sandwich press and cook for 2-3 minutes until golden and warm throughout. Transfer to a plate, cover with foil to keep warm, and repeat with the rest of the sandwiches. Cut into wedges before serving.
