Indulge in decadent layered cocoa bars with pecans made from Betty Crocker® double chocolate chunk cookie mix.
Ingredients:
  • 1 teaspoon instant espresso coffee granules or instant coffee granules
  • 2 tablespoons hot water
  • 1 pouch (17.5 oz) Betty Crocker™ Double Chocolate Chunk Cookie Mix
  • 1 package (8 oz) cream cheese, softened
  • 3 cups powdered sugar
  • 1/2 cup unsweetened baking cocoa
  • 2 eggs
  • 2 rolls (1.7 oz each) milk chocolate covered caramels, cut into fourths
  • 1 cup chopped pecans
  • 1/4 cup caramel topping
  • 1/4 cup chopped pecans
Instructions:
  • Preheat your oven to 350°F. Grease a 13x9-inch pan with cooking spray. Dissolve coffee granules in water in a small bowl and set aside. In a large bowl, mix cookie mix, oil, egg, and dissolved coffee until a soft dough forms. Press the dough into the bottom of the pan. Bake for 10 minutes, then allow to cool for 15 minutes.
  • In a medium mixing bowl, whip together cream cheese, powdered sugar, cocoa powder, and eggs until velvety. Add in caramels and pecans, folding gently. Smooth the mixture over the cookie base and bake for 30 to 35 minutes until firm. Allow to cool for 30 minutes before serving.
  • Drizzle bars with caramel topping and sprinkle with pecans. Chill for 2 hours until firm. Cut into 9 rows by 4 rows, and store covered in the refrigerator.
