Award-winning nut-filled butter cookies with gooey caramel center, decadently coated in chocolate. Try filling with caramel apple dip for a delicious twist!
Ingredients:
  • 1 cup butter
  • 1 cup confectioners' sugar
  • 2 cups all-purpose flour
  • 2 egg whites
  • 1 cup chopped pecans
  • 0.5 cup caramel ice cream topping
  • 1 cup chocolate coating wafers, melted
Instructions:
  • Preheat your oven to 325°F (165°C) for perfectly cooked results.
  • Cream the butter and sugar in a medium bowl until smooth. Mix in the vanilla followed by the flour.
  • Shape the dough into walnut-sized balls, coat them with egg whites, and then roll them in chopped pecans. Space the cookies 1 1/2 inches apart on an ungreased baking sheet. Use your finger to make an indentation in the center of each cookie.
  • Bake in the preheated oven for 12 to 15 minutes until the bottom of the cookies is lightly browned.
  • Once the cookies come out of the oven, fill the indentation with the luscious caramel filling and allow them to cool. Drizzle approximately 1 to 1 1/2 teaspoons of decadent chocolate over each cookie to completely coat the caramel center. Allow the cookies to rest until the chocolate is completely set.
