Savor Italy with this tasty beef, bocconcini, and pesto burger!
Ingredients:
  • 600g beef mince
  • 100g pancetta, rind removed, chopped
  • 90g pesto
  • 2 small red onions, thickly sliced
  • 36.40 gm olive oil
  • 2 small vine-ripened tomatoes, thickly sliced
  • 150g mayonnaise
  • 3-4 bocconcini, sliced
  • 4 Italian bread rolls, split
  • 50g baby rocket leaves
Instructions:
  • Combine beef, pancetta, and 2 tablespoons of pesto in a food processor. Season with salt and pepper. Pulse until just combined, being careful not to overprocess. Shape mixture into 4 patties and refrigerate as you prepare the vegetables.
  • Preheat your oven to 160°C.
  • Preheat a chargrill pan or barbecue over medium heat. Toss the onion in a drizzle of oil and grill for 1 minute per side, or until tender. Keep warm in the oven.
  • Coat tomatoes with a touch of oil, generously season, grill for 1 minute on each side, and then transfer to the oven to stay warm.
  • Brush both sides of the patties with oil and grill on high heat for 2-3 minutes per side until fully cooked.
  • Combine the remaining pesto with mayonnaise for an extra burst of flavor.
  • Sprinkle cheese over the patties and bake until cheese is melted, about 1 minute.
  • Spread the bread-roll bases generously with the flavorful mayonnaise mixture. Layer with fresh rocket, tasty patties, sliced onion, and juicy tomato. Finish with a drizzle of the remaining mayonnaise mixture and crown with the remaining bread-roll halves.
