Tuscan feta fried eggs recipe

Tuscan twist on viral feta eggs.
Ingredients:
  • 30g baby spinach, washed
  • 4.60 gm extra virgin olive oil
  • 40g Greek-style feta
  • 10.00 gm sun-dried tomato pesto
  • 2 slices toasted bread, to serve
Instructions:
  • In a small frying pan over medium heat, wilt the spinach by cooking for 2 minutes, stirring occasionally. Then, transfer the spinach to a heatproof bowl.
  • In the same pan, heat oil over medium heat. Crumble feta to form a 12cm circle. Spoon pesto over feta, add spinach to the center, then crack eggs over spinach. Reduce heat to medium-low and cook for 2-3 minutes, occasionally poking holes in egg whites for even cooking. Eggs are ready when cooked to your liking and feta is golden and crispy.
