Indulge in this heavenly ice cream for a cool summer treat.
Ingredients:
  • 1kg strawberries, hulled (to give 900g)
  • 200g fresh raspberries
  • 200g icing sugar
  • Waffle ice cream cones, to serve (optional)
Instructions:
  • Blend all ingredients in a food processor until smooth. Then, pass the mixture through a fine sieve, pressing firmly to get rid of any excess liquid. Remove and discard any solids remaining.
  • Process the puree in an ice cream machine following the manufacturer's guidelines, then freeze until solid. If hand-churning, refer to the note provided. Serve in cones if preferred.
