Two-Handed Crispy Fried Chicken Sandwiches

Cheesy fried chicken sandwich with green onions on a toasted bun - a handheld delight!
Ingredients:
  • 4 thinly sliced chicken breasts, halved
  • salt and ground black pepper to taste
  • 1 cup Italian-style panko bread crumbs
  • 3 tablespoons peanut oil
  • 2 green onions, thinly sliced
  • 4 slices Cheddar cheese
  • 4 hamburger rolls, split
  • 0.25 cup mayonnaise
Instructions:
  • Season chicken with a pinch of salt and pepper in a shallow bowl, then coat generously with panko bread crumbs, pressing them onto the chicken.
  • In a large skillet over medium-high heat, sizzle chicken in peanut oil until crispy; then flip, add green onions and Cheddar cheese to 4 pieces, and fry until golden and fully cooked, about 4-5 minutes.
  • Spread mayonnaise on both sides of the hamburger rolls. Place one piece of cheese-covered chicken and one plain chicken piece on the bottom half of the roll, then cover with the top half of the roll.
