Tzatziki Sauce (Yogurt and Cucumber Dip)

Turn low-fat yogurt into a creamy cucumber dressing for grilled meats or as a tasty dip for veggies and pita chips.
Ingredients:
  • 1 (16 ounce) container low-fat plain yogurt
  • 1 cucumber, peeled, seeded, and grated
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon fresh lemon juice
  • salt and pepper to taste
Instructions:
  • Prepare a colander with two layers of cheesecloth over a medium bowl. Add the yogurt on top, cover with plastic wrap, and leave to drain overnight.
  • Spread grated cucumber evenly on a paper towel-lined plate and let it drain for 1 to 2 hours.
  • Mix together the strained yogurt, cucumber, garlic, parsley, mint, lemon juice, salt, and pepper in a bowl. Chill in the refrigerator for a minimum of 2 hours before enjoying.
