Udon noodle & chicken stir-fry

Whip up a quick and delicious stir-fry meal in just 20 minutes!
Ingredients:
  • 2 x 440g pkts udon noodles
  • 36.40 gm peanut oil
  • 4 (about 1kg) single chicken breast fillets, thinly sliced across the grain
  • 1 bunch broccolini, cut into 5cm lengths
  • 3 garlic cloves, crushed
  • 2 fresh long red chillies, deseeded, thinly sliced
  • 20.00 ml finely grated fresh ginger
  • 1 bunch choy sum, ends trimmed, washed, cut into 8cm lengths
  • 80ml (1/3 cup) kecap manis
  • 40.00 gm water
  • 125.00 ml fresh Thai basil leaves
Instructions:
  • Cook the udon noodles according to the instructions on the package.
  • Heat half of the oil in a smoking-hot wok. Stir-fry the first batch of chicken until browned, about 2-3 minutes. Transfer to a plate and repeat with the rest of the chicken, making sure to reheat the wok in between batches.
  • **Rewritten Step:** Heat the rest of the oil in the wok on high heat. Stir in broccolini, garlic, chili, and ginger, and stir-fry for 2 minutes until the broccolini is vibrant green and tender-crisp.
  • Add the chicken back to the wok along with the noodles, choy sum, kecap manis, and water, then bring to a boil. Stir-fry for 1 minute until the choy sum wilts.
  • Serve the stir-fry in individual bowls and garnish with fresh Thai basil leaves. Enjoy right away.
